Minestrone Soup | Food

  

So as some of you may know I've been on Slimming World since July and have lost a couple of stone. I've still got a long way to go but after I posted some of my yummy food on Instagram you were all asking for some recipes so here we are, my syn free Minestrone Soup on Slimming world..



When making a Minestrone Soup, You can really add any veg you have, You don't need to buy it all fresh, It can be whatever you have in your fridge. I used :

1 onion,
3 potatoes
2 turnips
2 carrots
2 cellery sticks
2 leeks

You will also need some oil, I used Frylight as its Syn Free on SW and you will need stock. I used 2 and a bit tablespoons of boulion vegetable stock.

1. Start by spraying your pan/wok with frylight and fry off the onion, Then add in the potatoes as we want to start cooking the harder veg first! I like to put a little bit of water in the pan white the potatoes are cooking away and put the lid over the pan to help get them soft.

2. Then one by one starting adding any other hard veg, for me it was the turnips and carrots and then lastly the leeks and the cellery. Once these are fried, they may still be part but don't worry, They will soften in the water shortly.  I changed over to a bigger pan here and mixed a large jug of boiling water and boulion vegetable stock and mixed it around, then poured it in the pan till all the vegetables were covered and left on a low heat for an about 2 hours coming back every now and then to stir.

3. Once the vegetables were nearly done, I added some spaghetti to the soup, then when it was ready, served up a portion and left the rest to cool so I could put them in tubs to freeze. Perfect winter warmer food and easy to defrost and chuck into the microwave after I get home late from work.



  




I have been seriously thinking of getting a soup maker as I find having soups really speeds up my weightloss have any of you tried any?

  1. This looks delicious, I love soup in the winter. I would be tempted to pop it all into my slow cooker instead as I think I get a better flavour when it is slowcooked. I'm not sure about a soup maker, I think it might take some of the fun out of it for me. Someone needs to invent an appliance renting service where you can rent all these fancy gadgets for a week as there are so many I think about buying but want to try first.

  9. Congrats on your progress! It's amazing!
    I do my soup the exact same way as you minus the potatoes, which I just don't use to cut off carbs.
    I also love onion soup which is typical in France!

  11. So many reasons I love this! Minestrone soup is just gorgeous, and one of my favourite. It looks absolutely delicious the way you have prepared it. It's a fantastic idea for a Winter comfort food, and if it helps speed up weight loss then I'm sold.
    I don't know why I've not thought of preparing my own before, it's SUCH a good idea.
